Cinnamon & Brown Sugar Almonds

 

Years ago, I followed a blog named, Pennies & Pancakes which really embraced the frugal lifestyle.   Unfortunately, the creator of the blog has since stopped publishing posts.   However, prior to that happening, I downloaded her recipe for Cinnamon and Brown Sugar Almonds and have been making it for Christmas ever since.   Although the almonds are a little expensive, you can pick them up in a bulk section when they are on sale for about $5.00 a pound.   I include a little package of these gems when I give cookies as a present and they are always a hit.   


Ingredients 

1 Egg White

1 Tsp. Vanilla Extract (I use Immitation)

16 oz of Raw Almonds

½ cup Brown Sugar

¼ cup White Sugar

1 Tsp. Salt

2 Tsp. Cinnamon


Directions:


  1. Whip the egg white and vanilla extract together until firm peaks are formed. 



  1. Mix the Almonds in with the egg white/vanilla mixture. 



  1. In a separate bowl mix the brown sugar, white sugar, salt, and cinnamon until combined. 


  1. Mix both mixtures together. 



  1. Pour mixture onto a lined baking sheet and spread out until it is in a single layer. 


  1. Bake at 250 degrees until finished (about 45 minutes).  Stir the mixture every 15 minutes to avoid sticking.  



  1. Allow almonds to cool completely before storing.   I the candied almonds in the refrigerator.
