One-Pot Creamy Cajun Chicken Pata


Our family loves a creamy shrimp-based pasta dish and it helps that this dish is quick and

easy to prepare.     This is one of my son’s favorite pasta dishes.    I hope you enjoy it. 

INGREDIENTS

CAJUN SEASONING

  • 1 tsp smoked paprika 

  • 1 tsp oregano 

  • 1 tsp garlic powder

  • 1/2 tsp onion powder 

  • 1/4 tsp cayenne pepper 

  • 1/2 tsp black pepper 

  • 1/2 tsp salt 

SHRIMP PASTA

  • 1 Tbsp olive oil 

  • 1 Tbsp butter 

  • 1 lb. large raw shrimp (peeled and deveined) 

  • 4-5 tsp of cajun seasoning 

  • 1 yellow onion, diced 

  • 1 red pepper, diced 

  • 1 lb. penne pasta (uncooked) 

  • 15 oz. diced tomatoes 

  • 2 cups chicken broth 

  • 4 oz. cream cheese 

  • 3 green onions, sliced 

INSTRUCTIONS

  1. If you do not have cajun seasoning in your cabinet, mix up a batch.   Peel and devein the shrimp and place in a bowl, pour the cajun seasoning over the top.   Stir to coat the shrimp and store it in the refrigerator.  

  1. Add the oil and butter into a pan and heat.  Once heated, cook the shrimp until curled and pink.   Then remove from heat.

  1. Dice the onion and peppers.   Once diced, saute in the skillet for about 2-3 minutes or until softened.  


  1. Add the diced tomatoes and chicken stock.   Use this liquid to de-glaze the pan.  

  1. Add pasta, stir and bring to a boil.    Cover pot, lower heat to medium, and cook for 10 minutes. 

  1. Once pasta is tender and the liquid becomes thick and saucy add the shrimp back into the pot.   

  1. Add the cream cheese in chunks and stir it until the cheese is melted into the sauce.    Top the pasta with sliced green onions and serve. 



I serve this dish with a huge salad and fresh rolls.
