Apple Pfannelkucken ($0.35 per Serving)

I was first introduced to this delectable dish by The Frugal Girl.    I enjoyed her
recipe but modified it to suit my family’s preferences.  


Now whenever we need a little pick me up or a special breakfast, we will make
a few of these pancakes and enjoy.    (I must confess we need to make
multiples because my son will eat an entire pancake himself.)    


Ingredients: 
4 Tablespoons of Butter
3 Tablespoons of Brown Sugar
2 Eggs 
6-7 Tablespoons of Flour
¼ Teaspoon of Salt
6-7 Tablespoons of Milk
1/2 Teaspoon Vanilla 
1 Medium Apple 
2 Tablespoon of Sugar 
½ Teaspoon of Cinnamon 


Instructions: 

Place butter in a 9 inch pie plate and
place in the oven.   Heat oven to 400 degrees F. 

In a medium bowl, beat eggs, flour, salt, milk and vanilla until smooth.  

In a separate bowl, combine sugar and cinnamon.  

Remove pan from oven when butter is melted and
add brown sugar.   Stir until combined.   

Peel and slice apples.  
Then place in the pan in a decorative manner.   

Sprinkle it with sugar and cinnamon.   

Pour batter over the top and bake in the oven for
18-20 minutes or until puffed and brown.  

When finished flip onto a cutting board
and cut like a pie.    Enjoy.

Crocktober Day 3==> Sloppy Joes

  The leaves are turning colors and starting to drop.   In addition, the weather is turning cool and October is Crock Pot Month. So dust off your slow cookers and start using them to help get dinner on the table this month.     My slow cooker is a big asset and gets a lot of use over the fall and winter months.    When it is cold outside I use my slow cooker to make soups, stews, sauces, and one-pot meals.      Since school is in full swing, I can get my dinner going in the morning when I have more time.   Then, dinner is done when I am exhausted and this avoids the desire to eat out.    Crocktober is a challenge, to use your crock pot every day in October.    Although I will not use my crock pot daily, I will use it more this month and post several recipes.    Come along for the month and see what is cooking.    Day 3 Our third recipe is homemade Barbeque or Sloppy Joe....
