Pulled Pork Sandwiches
My mom always emphasized eating pork and sauerkraut on New Year’s day. You know--
for good luck. However, when I moved down south for graduate school, they shared the
tradition of eating pork with cabbage and black eyed peas for good luck.
Our family has decided to take the best of both worlds, so we have pulled pork w/ coleslaw.

My pulled pork sandwiches recipe is a modified recipe from the bolg, A Mindful Mom

In addition, I top the pulled pork with Bobby Flay's Coleslaw recipe with a few minor modifications

2 lbs boneless pork loin trimmed of fat
1 medium onion diced
1 tsp salt
2 tbs paprika
2 tbs onion powder
2 tsp garlic powder
1 tsp pepper
2 tsp chili powder
1 cup apple juice
¼ cup apple cider vinegar
Scant ¼ cup brown sugar
1 pint (1-2 cups) crushed tomato
Instructions
Place onion in crock pot and lay pork on top of onion. Combine the dry spices and cover pork with the mixture. Combine the juice, vinegar, brown sugar, and crushed tomato. Cover and cook on low for 8-10 hours. Shred with 2 forks and stir the meat into the juices. Serve.
