Potluck Lunch on a Budget
My husband’s group is having a potluck lunch this Thursday to celebrate the holidays.  He was assigned a side dish. Unfortunately I am working all week, so in order to provide a reasonably priced dish which is fresh and yummy, we choose a salad.  A Quinoa Salad--- Yummy. I had downloaded this recipe from a website a while ago and not planning on posting it, so unfortunately I do not know where to give credit for this recipe.  If you know, please comment below.
Quinoa Salad
Servings = 8

Ingredients

1 ¼ cup of Dry Quinoa
1 Can of Black Beans
¼ of a Red Onion
2 Cups of Corn
1 Medium Sized Tomato
1 TBSP Finely Chopped Cilantro
1 Lime Juice

Directions

Cook the quinoa and place into a big bowl or Tupperware container.  
 
Caramelize the corn by roasting it in a frying pan with a bit of olive oil and garlic for flavor.     
                 

Add all ingredients together into the bowl, squeeze lime juice, add salt and pepper, and stir it all together.

1 Can of Black Beans ($.69 can = $.69)
¼ of a Red Onion ($.40 per onion =$.10 )
2 Cups of Corn ($.45 per can X 2=$ .90)
1 Medium Sized Tomato (Roma Tomatoes @ $.99 lb = $.50)
1 TBSP Finely Chopped Cilantro ($.99 per bunch = $.50)
1 Lime Juice ($.59 per lime= $.59)

Total Recipe Cost = $5.28
Cost Per cup Serving = $0.66

2025 Updated Breakfast Under $1.00

On the USDA Website, their thrifty grocery budgets range from  $25.70 to $72.80 per week ($3.67 - $10.40 per day) per person.   The two factors that determine the amount allocated are age and sex.  With such a small amount of money allocated daily for food and my attempt to eat healthily, I need to plan each week carefully.     With the Bird Flu hitting America hard recently, the egg is no longer a humble star but is turning into a luxury.     A dozen eggs cost $5.49 or $0.46 each.  At this price, I am looking at other options for breakfast.   Breakfast is a great place to add value to your meal planning.    It can be the cheapest or most expensive meal.  The choice is up to you.    NOTE: Prices are for the Northeast area for March 1,  2025 Let’s look at breakfasts that come in at or under $1.00.     Beagle and Cream Cheese ($0.69 per serving) Kroger Prices Bagels (6ct)- $2...
