Attitude of Gratitude

What do you have to be grateful for this week?

Ability to Problem Solve

Our family was able to solve the problem of a broken refrigerator.    My husband quickly diagnosed the issue and we made a plan to save our groceries.     Our family was able to work together and move most of the food to our second refrigerator (so lucky to have one) or to the garage.    Our weather is cold this week and keeps our garage to a cool 42 degrees.

Our Emergency Fund

With our emergency fund covered, the  purchase of a replacement refrigerator and the delivery date was within a week.      Wow- I expected to be waiting a lot longer for the refrigerator.

My Family

We pulled together to solve a family emergency, enjoyed each other's company, and cared for each member to meet everyone’s needs. Three-Dragon Ante is a new family favorite and we play this game 2-4 times a week.

Saturday Cooking Together Night

We started cooking together on Saturdays.   This includes planning, prepping, cooking and eating a special meal each week.   This week’s dinner- Grilled Chicken, Roasted Potatoes, Broccoli and Cauliflower, and Salad. Since the refrigerator issue was Saturday, we didn’t have a chance to make dessert this week, but will next week.

 Canning Skill

We didn’t have enough room in the back up freezer for the blueberries we picked up last summer.      We had the choice of discarding them or trying to make jelly.    I was out of Sure Jell and Kroger had it in stock.     In addition, over the past two summers, I have taught myself how to make jam and jelly.     Blueberry Jam is my husband’s favorite and we made 6 more jars this week.

What are you grateful for?

Since March has 4 weeks, our monthly budget is $757.20.   We elevate our dining experiences by including fresh fruits, vegetables, and higher-quality meats.  Since we have health concerns and are active individuals, we limit our processed food choices.    Grocery Shopping Tip:     Utilize your grocery store’s loyalty program. This month, my 2 primary grocery stores have provided me with store coupons for bread, Silk milk, jelly candy, frozen vegetables, and Bali coconut water.  Here is what we did this week to make our week easier: ...
